Conceito Sparkling Brut Nature
Douro floor grapes, but with the Austrian grape variety Grüner Veltliner, made this white escape from the appellation to the IVV label. First made in the 2012 vintage, it is fermented in used French oak barrels and then sparkled and aged in bottle over many months in a cold constant temperature cellar. It is a rich sparkling wine, full of nuances of brioche and pain grillé, to which is added the exciting spiciness of the grape variety. Fine and firm bubble, generous juiciness that is balanced in the extreme dryness to privilege the characteristics of the grape variety, this is a sparkling wine that can be drunk alone or with a wide range of dishes.
Vinification
The grapes are cooled and then pressed in a pneumatic press. Cold decantation, followed by fermentation in temperature controlled barrels and regular bâtonnage until one month before bottling.
Aging
8 months in used French oak barrels with regular bâtonnage. After the second fermentation the bottles were aged in cold and constant temperature for 24 months.
