MOB Gauvé Tinto is made from native red grapes from old vines in the Dão wine region. It was cold macerated for 14 days in granite Lagares and fermented there at controlled temperatures. After the fermentation process, MOB Gauvé Tinto was transferred to used 225 liter French oak barrels where it remained for 24 months before being bottled. Moreira Olazabal & Borges offers us this MOB Gauvé a wine made in the Dão region. This project was born from the will of three winemakers (Jorge Moreira, Francisco Olazabal and Jorge Serôdio Borges) to make a wine together. The region chosen was the Dão, for which they have a common admiration that was born when they tasted older wines, from the 60's and 70's, which surprised them by their elegance and freshness. The identity and complexity of these wines is indeed remarkable and served as an element of inspiration for the production of MOB wines.
