DoDa 2012
Rolf Niepoort was the driving force and Dirk the creator of this project that started 17 years ago. This wine is born from Rolf Niepoort's idea that "the ideal Portuguese wine will be the one that can combine the elegance, freshness and longevity of the Dão wines with the structure and power of the Douro wines, that can reconcile the fruit of the Douro's schist soils with the aromas of oak and minerality of the Dão's granite soils." This edition results from the union of 60% of a Douro wine blend produced at Quinta de Nápoles from very old vineyards, one of them with more than 120 years, and 40% of a Dão blend produced at Quinta da Pellada, from old vines, with the typical grape varieties of the region: Tourigo, Jaen, Alfrocheiro and Tinta Roriz.
Vinification
Most of the Dão blend was vinified at the winery, and then aged in French oak barrels for malolactic fermentation. About 50% of the Douro blend was vinified in vats and the remainder in a traditional granite lagar, where it was foot trodden with a short pre-fermentative maceration. After fermentation, the wine was aged for 21 months in French oak barrels, where it underwent malolactic fermentation. Doda was bottled without any cola added.
