Vinification
The 2015 viticultural year in the Dão was marked by a drier winter than the previous year, and the rain that fell in early spring provided some water reserves in the soil, which supported the plant during the dry spring and summer months. Being an early year, by July the vines were already at the veraison stage, and the harvest started a week earlier than the previous year. Muleta wine is the result of the effort to conserve the genetic heritage that exists in the Dão region. We have identified some grape varieties such as Jaen, Baga, Touriga Nacional, Bastardo, Moscatel Pardo, but there are many others. Fermentation in lagar, aging in 225l barrels with 10 years and bottled in May 2017 by gravity without filter. Minilismalist intervention to preserve the characteristics of the vineyard.
