Vinification

Manual harvesting. Manual selection of clusters. De-stemming followed by crushing. Co-fermentation in stainless steel vats with moderate temperature control and manual remontage. Aged in 2nd and 3rd use oak barrels for 14 months. 

SECRET SPOT WINES

Secret Spot Wines was born from a dream that came true in a project for two and has only one goal: to produce the best wine, faithful to its origins. The first step was to find an accessible vinification site, with a mild climate (high altitude), spacious and well sized, that could combine the traditional Douro winemaking practices with the contributions of modern oenology. The place found was the Quinta da Faísca Winery, in the parish of Favaios. The construction dates from 1946. In the winery there were 3 stone vats and 1 stone press (on the upper floor) as well as a vertical press. In the lower floor there were 14 wooden barrels for the aging of Port and Moscatel wine. With the objective of creating a winery that would allow the vinification of small parcels using different vinification styles, some changes were made. All the grape reception was moved to the outside of the winery, keeping the mills and the vertical press. In the lower floor 7 barrels of different capacities were remodeled, 1 vertical press was installed, 3 fermentation vats and 6 storage vats. In the space occupied by the remaining old barrels are today resting oak barrels. From the selection to the pressing of the grapes no pump is used. The architectural element of this winery, construction on two floors, so characteristic of the Douro wineries, allows the wine to be moved using gravity.
