Vinification
The harvest took place under perfect weather conditions in the first two weeks of September. The grapes harvested and transported in 22 kg boxes were subject to a rigorous selection on the selection table and then destemmed. We proceeded to a pre-fermentative pellicular maceration at low temperature, followed by fermentation in stainless steel tanks with temperature control and daily pumping over for 7 days.
Aging
Around 80% of the blend ages for 13 months in stainless steel tanks. The remaining wine ages in French oak barrels for 6 months. Certified wine born for all. 100% vegetal in its interior.
