Vinification
After rigorous selection of grapes and destemming, we proceeded to a pre-fermentative pellicular maceration, followed by a temperature controlled fermentation in stainless steel vats with daily pumping over.
Aging
Aged in French oak barrels for 9 months. The wine is not filtered or stabilized by cold in order to respect all its elements.
