Winemaking
Grapes harvested by hand, into 25kg boxes, at their ideal point of ripeness, intending that they present a vigorous ripeness, leading to greater aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and presses, allowing the quality constituents present in the grape skin to pass smoothly into the wine. After malolactic fermentation, the wine is aged in 225 and 400 liter French oak barrels for approximately 12 months.
