Citrus and vegetal in the aroma it shows notes of lemon, tangerine and stone fruits, namely apricot. In the mouth it is balanced and fresh, with excellent acidity complemented by a citric and mineral sensation filling the entire palate. The very present fruit, although delicate, completes this light but structured set. It will evolve well in the bottle.
Winemaking
Process Reception of the grapes in the cellar in boxes of 24 kg. Manual selection followed by destemming, skin maceration and gentle pneumatic pressing. The must ferments in stainless steel vats at low temperature. Stabilization and light filtration. No animal derivatives are used in the process, making this wine suitable for vegan consumers. Special care was taken in winemaking, minimizing any intervention, with the aim of producing a wine that clearly expresses the particularities of the grapes and the terroir.
Monologue
The Monólogos are monovarietal wines, produced from selected plots. The vineyards, using organic and sustainable production, are located between 190 and 540 meters above sea level. The aim of the Monologues is to convey, each year, the individual expression of each of these varieties and parcels. Thus, intervention in the cellar is limited to monitoring a healthy natural fermentation process.
Reverse monologue
Produced at Quinta de Santa Teresa, with grapes from the P67 plot, this is a wine with character, which is fine in the mouth, accompanied by a pleasant and well-integrated acidity.
