Winemaking
Reception of the grapes in the cellar in boxes of 24 kg. Manual selection followed by destemming, skin maceration and gentle pneumatic pressing. The must ferments in stainless steel vats at low temperature. Stabilization and light filtration. No animal derivatives are used in the process, making this wine suitable for vegan consumers. Special care was taken in winemaking, minimizing any intervention, with the aim of producing a wine that clearly expresses the particularities of the grapes and the terroir.
The House of Arrabalde
Located in the sub-region of Baião, Casa do Arrabalde has its vineyards located at an altitude of 490 meters. Based on granitic soil and using organic production, we find the Avesso, Alvarinho and Arinto varieties there, which benefit from marked temperature variations, due to the proximity of the foothills of the Marão mountain range. The five hectares of vines, due to the characteristics of those soils, offer a low production, which results in a wine with an unusual aromatic component and great freshness.
