The Winemaking Process

At Campolargo Vinhos, harvesting and processing the Baga grape variety is taken very seriously. Under the supervision of winemaker, the harvest is carried out exclusively by hand, allowing the very best bunches of Baga to be thoroughly selected. To ensure a quality product, the berry color, acidity and sugar levels are all monitored until the best lot for aging is selected. The grapes are then chilled and crushed before being fermented separately. Following fermentation, malolactic fermentation is completed in stainless steel tanks.
