Vinification

The 2019 wine year in the Dão was marked by a dry winter and the rain that fell in early spring allowed for some water reserves in the soil, which supported the plant during the dry spring and summer months. Being an early year, in July the vines were already at the veraison stage, and the harvest started a week earlier than the previous year. This wine is obtained after hand picking the grapes into boxes. This is followed by a short pressing where the must is obtained followed by a slow fermentation in stainless steel vats in order to preserve all the elegance and aromatic characteristics.
