Vinification

Tobias Palhete is a red wine obtained from the partial tanning of red grapes or the tanning of red and white grapes, where the total amount of white grapes does not exceed 15%. Fermentation took place with indigenous yeasts and traditional Dão winemaking. Dão Palhetes have been very popular in the past, being referred to in books by authors such as Aquilino Ribeiro and Camilo Castelo Branco.
