Terroir
The Alvarinho grapes used in this pomace brandy come from several small vineyards, planted in granite soil between 100 and 200 meters in altitude. With a very particular microclimate, the region of Monção and Melgaço is protected by a series of mountains that create the perfect conditions of rainfall, temperature and number of hours of sun necessary for the excellent maturation of the Alvarinho.
Winemaking
The aromatic Alvarinho skins that remain after pressing, ferment for 1 month in an airless environment. This fermentation transforms the existing residual sugar into alcohol and extracts the best flavors from the skins. Slow distillation, using the traditional method, helps to reveal the aromas that will then continue to concentrate during the aging process. Currently, our Soalheiro Brandy ages for at least 20 years. In the first years it ages in young oak, then it moves to old oak and, finally, it ages in used barrels that were previously used for the production of Port Wine. The complex aging process over the years gives this brandy a unique personality.
Follow-up Suggestion
Brandy Bagaceira Velha is a brandy that has its peak when served as a digestif at the end of a meal. It's wonderful when accompanied by something sweet. We also recommend its use as an ingredient in desserts, such as mousses, in order to enhance the aroma and flavor.
