All our grapes come from the highest quality vineyards in the Alentejo region, in the south of Portugal. The vineyards, of integrated production, are cultivated in very poor soils of schist or granitic origin, naturally giving rise to very concentrated grapes. The aromatic profile is further enhanced by the cultural practices of defoliation, topping and weeding of green bunches. Very selective manual harvest in 20Kg boxes. Transport to the winery in a refrigerated truck. The curls are carefully selected on a sorting table. Spontaneous fermentation, 55% sangria and 45% direct press.
