Straw yellow color of medium intensity. An evolved aroma without the fresh fruit notes but with beautiful compote notes, tea, beeswax, soft toast and dried fruits. In the mouth it is aromatic and delicate, very creamy, concentrated, with excellent structure and complexity. A long finish marked by toasted hazelnut, honey and lemon zest, a sophisticated and elegant sparkling wine.
Vinification
The grapes, harvested in 20 kg boxes, were gently crushed, without destemming, in a pneumatic press, and the must was immediately pumped into stainless steel fermentation tanks, where fermentation of the base wine took place. The wine was then bottled and placed in a wine cellar for the second fermentation according to the classic method, and after bottle ageing, the ''dégorgement à la glace'' was done.
Fermentation temperature: 15 to 17ºC (base wine) Fermentation equipment: Stainless steel vats with cooling jacket (base wine).
