Vinification

Integrated production method. Decanting of the grapes without pumping over and temperature controlled fermentation with only the fine lees. Soft pressing. Spontaneous fermentation with temperature control in a vat. Aged on fine lees until mid April. Manual harvest with selection of the best grapes. Light filtration.
