Winemaking
The name Chaminé comes from one of the parcels of the ''Chaminé de Gião'' vineyard. Harvested at the optimum point of maturation. The grapes were destemmed and gently crushed, followed by fermentation at controlled temperatures with frequent pumping over and deletage. This was followed by a period of aging on fine lees in a stainless steel tank and partially in used French oak barrels.
Chaminé Red Wine
Chaminé wine, a wine that has won many awards over time, belongs to Cortes de Cima, which produces wines in two areas of Portugal: in Vidigueira and on the coast, in Zambujeira Velha. In 1988, a Danish couple and an American woman left on a sailboat looking for a place to raise a family. This is how the Cortes de Cima project came about, with an area of 140 hectares of vineyards, where the Aragonês, Syrah, Touriga Nacional, Trincadeira, Petit Verdot, Antão Vaz and Verdelho varieties are planted. The oldest vines were planted in 1991, when the Syrah variety was not allowed by the region's regulations. Even so, Hans, convinced that he had the ideal climate and soil for this variety from the Rhône, created the first non-legalized Syrah wine, produced in 1998 and marketed under the name Incógnito, which quickly gained fame in Portugal and medals in London, Brussels and Bordeaux.
