The grapes that give rise to the single-varietal wines of the Lisbon Region come from a single vineyard called "Zavial". In the case of Pinot Noir, this is a 6 hectare parcel where three different clones of this grape variety are planted. In the case of the Syrah, it is a 20 year old parcel of 1,2ha. Both wines do not undergo any filtration or artificial stabilization and were bottled in small quantities.

Winemaking

Grapes are destemmed and crushed right upon arrival to the winery. Cold maceration with skin contact for 24 hours. Fermentation in stainless steel tanks with temperature control and extended maceration. Aged 9 months in French oak barrels.
